The voice assistant you select in the initial set-up (pictured below) will be used as the default assistant on your headphones. You can change the default assistant in the ‘HK Headphones’ app: Settings > Voice Assistant, and selecting your preferred voice assistant. Your headphone may restart after switching Voice Assistant.
